Banh Mi-Inspired Turkey Sandwich
This quick and flavorful deli turkey sandwich gets a Vietnamese twist with pickled carrots, cucumbers, cilantro, and a sriracha mayo spread.
Ingredients:
1 French baguette
6 oz sliced deli turkey
½ cup shredded carrots
¼ cup thinly sliced cucumber
¼ cup rice vinegar
1 tbsp sugar
2 tbsp mayonnaise
1 tsp sriracha (or to taste)
Fresh cilantro
Optional: jalapeño slices
Instructions:
In a bowl, mix carrots and cucumbers with rice vinegar and sugar. Let marinate for 10–15 minutes.
In a separate bowl, mix mayonnaise and sriracha for a spicy spread.
Slice baguette lengthwise. Toast if desired.
Spread spicy mayo on both sides of the bread.
Layer deli turkey, pickled veggies, cilantro, and optional jalapeños.
Slice and serve with chips or a light salad.
