Ingredients for the tomato sauce:
✔ 2 tbsp olive oil
✔ 1 small onion (diced)
✔ 1 red bell pepper (diced)
✔ 3 cloves garlic (minced)
✔ 1 tsp paprika
✔ 1 tsp cumin
✔ 1/2 tsp chili flakes (optional)
✔ 1 can (28 oz) crushed tomatoes
✔ Salt and black pepper to taste
Ingredients for the eggs:
✔ 4–6 large eggs
✔ 1/4 cup feta cheese (optional)
✔ 1/4 cup fresh parsley (chopped)
Ingredients for serving:
✔ Warm pita bread or crusty bread
✔ Olive oil drizzle (optional)
Yield: 4 servings of Easy Shakshuka with Tomatoes & Warm Spices
DIRECTIONS:
For the Tomato Sauce:
Heat olive oil in a large skillet over medium heat.
Add diced onion and bell pepper and cook for about 5 minutes until softened.
Stir in garlic, paprika, cumin, and chili flakes. Cook for about 1 minute until fragrant.
Add crushed tomatoes and season with salt and black pepper.
Simmer the sauce for about 10 minutes until slightly thickened.
For the Eggs:
Use a spoon to create small wells in the tomato sauce.
Crack eggs into each well.
Cover the skillet and cook until egg whites are set but yolks remain slightly runny, about 5–7 minutes.
Sprinkle feta cheese and fresh parsley over the top.
For Serving:
Drizzle with olive oil if desired.
Serve hot with warm pita bread or crusty bread for dipping.
