✔ 1 tsp smoked paprika
✔ 1/2 tsp cumin
✔ Salt and black pepper to taste
Ingredients for the avocado lime sauce:
✔ 1 ripe avocado
✔ 1/2 cup sour cream or Greek yogurt
✔ Juice of 1 lime
✔ Salt to taste
Ingredients for the tacos:
✔ 8 corn tortillas
✔ 1 cup shredded cabbage
✔ Fresh cilantro
✔ Lime wedges for serving

DIRECTIONS:
For the Cauliflower:
Preheat oven to 425°F.
In a large bowl, toss cauliflower florets with olive oil, chili powder, smoked paprika, cumin, salt, and pepper.
Spread evenly on a baking sheet.
Roast for 25 minutes, flipping halfway through, until golden brown and slightly crispy.
For the Avocado Lime Sauce:
In a blender or bowl, combine avocado, sour cream (or Greek yogurt), lime juice, and salt.
Blend or mash until smooth and creamy.
Adjust seasoning to taste.
For the Tacos:
Warm corn tortillas in a skillet or microwave.
Fill each tortilla with roasted cauliflower.
Top with shredded cabbage and drizzle with avocado lime sauce.
Garnish with fresh cilantro and serve with lime wedges.
