Ingredients for the cauliflower:

✔ 1 head cauliflower (cut into florets)
✔ 2 tbsp olive oil
✔ 1 tsp chili powder
✔ 1 tsp smoked paprika
✔ 1/2 tsp cumin
✔ Salt and black pepper to taste

Ingredients for the avocado lime sauce:

✔ 1 ripe avocado
✔ 1/2 cup sour cream or Greek yogurt
✔ Juice of 1 lime
✔ Salt to taste

Ingredients for the tacos:

✔ 8 corn tortillas
✔ 1 cup shredded cabbage
✔ Fresh cilantro
✔ Lime wedges for serving

Yield: 4 servings of Roasted Cauliflower Tacos with Avocado Lime Sauce

DIRECTIONS:

For the Cauliflower:

  1. Preheat oven to 425°F.

  2. In a large bowl, toss cauliflower florets with olive oil, chili powder, smoked paprika, cumin, salt, and pepper.

  3. Spread evenly on a baking sheet.

  4. Roast for 25 minutes, flipping halfway through, until golden brown and slightly crispy.

For the Avocado Lime Sauce:

  1. In a blender or bowl, combine avocado, sour cream (or Greek yogurt), lime juice, and salt.

  2. Blend or mash until smooth and creamy.

  3. Adjust seasoning to taste.

For the Tacos:

  1. Warm corn tortillas in a skillet or microwave.

  2. Fill each tortilla with roasted cauliflower.

  3. Top with shredded cabbage and drizzle with avocado lime sauce.

  4. Garnish with fresh cilantro and serve with lime wedges.
